Helppo ja herkullinen klassikko – ratatouille

Ratatouille on yksi luottoresepteistäni, sillä se on helppo valmistaa ja toimii niin pääruokana kuin lisukkeenakin. Itse tykkään improvioida ainesosien suhteen, riippuen jääkaappini sisällöstä. Pataan voi päätyä reseptin ainesten lisäksi myös esimerkiksi sipulia ja fenkolia. Ratatouille valmistetaan hitaasti hauduttaen, mutta aktiiviseen valmisteluun kuluu vain hetki aikaa, joten ruoka on perjaatteesa myös nopea valmistaa. Sen voi jättää poreilemaan liedelle töitä tai kotiaskareita tehdessä (tai vaikkapa televisiota katsellessa). Ratatouillen voi nauttia sellaisenaan, riisin tai perunoiden (tai miksei pastankin) kanssa tai sitten lisukkeena kalalle tai lihalle. Täysin vegaaninen kasvisruoka, joka on ihanan täyteläistä lohturuokaa!

Helppo ja herkullinen ratatouille

2–3 annosta
1h 10 min
vegaaninen, gluteeniton

– 0,75 dl rypsi- tai oliiviöljyä
– 6–7 valkosipulinkynttä
– 1 pieni munakoiso
– 1 punainen paprika
– 1 pieni kesäkurpitsa
– 1 tlk (400 g) säilyketomaatteja
– 2 kourallista tuoretta timjamia tai 3 tl kuivattua
– suolaa, mustapippuria

Kaada rypsiöljy kattilaan. Murskaa joukkoon valkosipulinkynnet. Pese munakoiso, paprika ja kesäkurpitsa, kuutioi ja lisää kattilaan. Itse haluan ratatouilleni erittäin pieninä kuutioina, mutta voit jättää vihannekset reilummiksikin paloiksi. Lisää joukkoon myös säilyketomaatit ja timjami. Lisää kattilaan myös reilu ripaus suolaa ja hieman mustapippuria.

Nosta kattila liedelle ja kuumenna. Anna ratatouillen kiehua noin 5 minuuttia. Sekoita muutaman minuutin välein. Laske sitten lämpöä hieman, peitä kattila kannella ja anna poreilla miedolla lämmöllä vähintään 45 minuutin ajan. Lisää tarvittaessa vielä suolaa kypsään ratatouilleen. Ratatouillen voi nauttia heti, mutta sen maku vain paranee ja syvenee lämmitettäessä, joten säilyvyys on erinomainen!

  • Free evening, a glass of white wine on the coffee table, cheese and grapes on the plate and these beautiful walnuts waiting their turn. I’ve almost forgotten how good it feels to do nothing.
I really like buying nuts in shells if possible. It reminds me of my childhood. We had all kind of nuts on a beautiful wooden tray, waiting for weekend evenings, maybe even guests. I remember how exciting it was to crack a hard shell and find the eatable parts inside. I didn’t like the taste of walnuts as a child, so I just loved to crack them and hand them to my parents. Sometimes I might break more than anyone wanted to eat.
Nowadays I love also the eating part. My favourites are hazelnuts and peanuts. (Well, who would not love peanuts.) Do you have any favourites?

  • Oh what a big day last Tuesday was. It was the last photoshoot day for my next cookbook. All the recipes and pictures are done now!
It’s odd how achieving something can leave you a little confused with your feelings. Do you know what I mean? Like I’m so relieved and happy but at the same time it’s a bit sad that this project I’ve had since last summer is almost over. When a work project is very meaningful, it can be a bit hard to let go.
There are still many things ahead before I get the book in my hands. Layout design, proofreading and many little steps more. But finishing the photographing part is a big deal for me.
And guess what! My book will be in English too, so anyone around the world can order it. I’m so excited about this! I can’t wait to show you more!
  • Today was a big day for me. I’m going to talk more about it tomorrow! Then my mind hopefully has more thoughts than “can we go to sleep now”. But right now I just want to share a picture of one of my favourite places and some beautiful words by David Attenborough.

  • Pasta is my safe dish. It’s simple, easy and the dressing can be made with anything you ever want. It’s something I cook on a busy day when my fridge is empty and the cooking can’t take more than 15 minutes.
This hazelnut pea pasta was created, again, with very poor ingredients, but it turned out to be delicious! I didn’t measure up the exact amount of ingredients but here’s a draft of that recipe you can vary!

Hazelnut pea pasta:
• peas (fresh or frozen)
• 1 tbsp of olive oil
• crushed hazelnuts
• pasta

• 2 handfuls of basil and parsley
• 1-1.5 dl of olive oil
• 2-3 cloves of garlic
• 1 tsp of dijon mustard
• 0.5 tbsp of white wine vinegar
• 0.5 dl of grated parmesan cheese (+ extra on top)

Heat up the 1 tbsp of olive oil in a small sauce pan and add the peas. Don’t fry, just warm them.
Blend the sauce ingredients together.
Cook the pasta in a pan of boiling salted water according to the packet instructions. Mix with the sauce, peas and crushed hazelnuts. Finish with grated parmesan cheese. 🌿

  • Today we had a long walk in the forest near the sea. It’s a forest of old curvy pine trees and gentle cliffs leading you to the shore. The wind was cold but the sun was so bright it made the remains of snow shine. There was a swan couple gliding in the open sea. It really felt like spring again.
Now I’m finishing up the weekend with a traditional dish my grandmother taught me to make. Comforting and rich cabbage rolls. In grocery store I saw the first beautiful savoy cabbages of the spring and I decided to differ from my granny’s recipe a little. This dish really throws me back to my childhood, warm summer days spent in the countryside and my grandmother cooking in the kitchen. It’s so amazing how flavours can bring so many memories.

  • Again it has been an ongoing game between winter and spring. Last night the rain washed the streets and the warming sun gently woke us up to this beautiful day. An hour ago it started snowing and now the snowflakes are floating in the air like in a perfect Christmas scene.
We all know spring is going to win sooner or later, but right now we can just play along. I decided to escape this wintery moment and crawl under a big blanket and watch tv on the sofa. Maybe some chocolate too and my evening will be perfect.
