Helppoa ja hyvää: yrttinen munakoiso-tomaattipaistos

Joulun ja uuden vuoden herkuttelun jälkeen on ihana vaihtaa raskaat ruoat kevyisiin kasvisherkkuihin. Kun tähän lisää vielä tammikuun arjen kiireet, ovat tämän hetken täydellisimpiä reseptejä helpot ja nopeat, mutta silti herkulliset kasvisruoat! Erilaiset vihannespaistokset ovat aina toimivaa arkiruokaa, jotka pelastavat sellaisenakin päivänä kun kokkaaminen ei oikein kiinnostaisi. Tässä yksi superhelppo mutta herkullinen kasvisruokaidea kiireiseen arkeen!

Munakoiso-tomaattipaistos

1 annos (2 annosta lisukkeena)
35 min
vegaaninen, gluteeniton

– 1 keskikokoinen munakoiso
– 2 isoa tomaattia
– 4 rkl rypsi- tai oliiviöljyä
– 3 rkl tomaattipyrettä
– 2–3 valkosipulinkynttä
– 0,5–1 tl kuivattua timjamia tai oreganoa
– suolaa
– tuoretta timjamia

Kuumenna uuni 190 asteiseksi.
Pese munakoiso ja tomaatit. Poista sekä munakoisosta että tomaatista kanta ja siivuta molemmat ohuiksi siivuiksi. Sekoita kulhossa 2 rkl öljyä, tomaattipyree, valkosipulinkynnet murskattuina, kuivattua timjamia sekä ripaus suolaa. Asettele uunin kestävään vuokaan ensimmäisenä siivu munakoisoa, sitten tomaattisiivu ja lopuksi ohut kerros maustettua tomaattipyrettä. Toista niin kauan kuin aineksia riittää. Ripottele päälle loppu öljy (2 rkl). Paahda uunissa n. 25 min, kunnes molemmat vihannekset ovat kypsyneet pehmeiksi. Viimeistele annos tuoreella timjamilla. Nauti lisukkeena aterialla tai sellaisenaan esimerkiksi riisin tai quinoan kanssa.

  • My favourite moments in the summer are these magical hours when the golden light is sifting through the branches and leaves. It’s still warm, but not as hot as during the day. A perfect moment to sit down for a while, have a piece of rhubarb pie and enjoy the view.

Like I told, this week is crazy busy. But I’ve enjoyed these two photoshoot days a lot. Three more days to go and then I’m off to our cottage again!

I still can’t stop thinking about how happy it made me that I could spend 24 hours away from the city. In the middle of green, blooming nature. This was the first summer weekend. The temperature rose up to 25 C and I felt bad that I didn’t have my swimsuit with me.

I saw a sea eagle flying above my garden, had the joy of planting a new sea buckthorn tree, bathed in the hot steam of sauna, saw a gorgeous sunset painting the sky pink and fell asleep to the sound of singing eurasian bittern. The day couldn’t have been more perfect.
