Viikonlopun lohturuokaa: taivaalliset maapähkinänuudelit

Tämä on yksi tämän hetken suosikki lohturuoistani! Rakastan erilaisia maapähkinäkastikkeita, mutta joskus ruoanlaitto ei innosta ja klassinen satay-kastikekin tuntuu liian vaativalta tai aikaa vievältä. Niihin hetkiin on tämä resepti, jonka kastike on todella helppo valmistaa. Raikkautta tuhtiin annokseen tuovat kurkkusiivut ja lehtikaali. Niin yksinkertaista ja niin hyvää!

Taivaalliset vegaaniset maapähkinänuudelit

Taivaalliset maapähkinänuudelit rapealla lehtikaalilla

1–2 annosta
20 min
vegaaninen, gluteeniton

Maapähkinäkastike:
– 3 rkl maapähkinävoita (sokeroimatonta)
– 1 rkl seesamiöljyä
– 1,5 rkl soijakastiketta
– 1 rl tuoretta inkivääriä raastettuna
– 1 valkosipulin kynsi raastettuna tai murskattuna
– 5–6 rkl vettä

– 50 g lehtikaalia
– 1 rkl rypsiöljyä
– suolaa
– n. 10 cm pala kurkkua
– 160–200 g täysjyvänuudeleita (tarvittaessa gluteenittomia)

Sekoita kaikki kastikkeen ainekset keskenään kulhossa tasaiseksi.
Leikkaa lehtikaalista paksu lehtiruoti pois ja leikkaa tai revi lehdet reiluiksi paloiksi. Paista lehtikaalia kuumalla paistinpannulla öljyssä, kunnes se on rapeaa ja ruskistunut hieman reunoilta (varo polttamasta). Mausta reilulla ripauksella suolaa.
Siivuta kurkku mahdollisimman ohuiksi siivuiksi esimerkiksi juustohöylällä tai mandoliinilla eli vihannesleikkurilla.
Kypsennä nuudelit pakkauksen ohjeen mukaan. Siivilöi.
Sekoita nuudelit ja kastike keskenään ja viimeistele annos rapealla lehtikaalilla ja ohuilla kurkkusiivuilla. Nauti heti!

I always get so much energy from spending time with animals. Usually with my family’s dog but also with other ones, like this summer afternoon I spent with the lambs of @tiirinkosken_tehdas . I don’t know what it is, but with animals I can’t feel myself anything else than calm and happy. Do you know what I mean?

That’s also one reason why I’m waiting for my next week’s trip even more – I can spend the whole week with my favourite dog!
